Carrot and beetroot chocolate surprise – Baked
- 250 g dark chocolate
- 125 g raw beetroot, grated finely
- 125 g grated carrot, grated finely
- 4 large eggs whites and yolks, separate bowls
- 75 g golden caster sugar
- 120 g ground almonds
- 1 teaspoon baking powder
- 1 tbsp cocoa powder
- plain flour , for dusting the side of the pan with baking paper
- olive oil to grease the baking pan
! Preheat oven to 180°C/350°F/gas 4
! In a bowl, mix egg yolks with the shredded beetroots and carrots
! Break into pieces dark chocolate, melt over hot water until completely melted, remove from fire
! Stir in melted chocolate and all remaining ingredients into the beetroot and carrot mixtures (except egg whites).
! In a separate bowl, beat egg whites with electric mixer until it form stiff peaks
! Fold in delicately the egg whites in two folds, with the beetroot and carrots combinations.
! Grease the baking pan with olive oil, dust with flour the sides of the pan before lining with baking paper.
! Using a spatula, pour over the cake mixture evenly into your baking pan
! Bake for 45 minutes or until cake rises . Check by inserting a cake tester,when it comes out clean, cake is done.
! Remove cake from the wire rack. Let cool
! Serve a slice with creamed melted chocolate and Greek yogurt
