Butterless /No Butter

Lemon Squares with marshmallows



3/4 cup all-purpose flour, lightly heated  to toast

1 1/2  cup confectionery sugar

1/2 tsp salt

3 large eggs

3/4 cup of fresh lemon juice

2 tablespoon of lemon zest, finely grated

1 teaspoon of vanilla extract

a dash of cinnamon powder



Prepare two bowls:

The first bowl, sieve the flour, confectionery sugar and salt. Set aside

In the second bowl, whisk the eggs , lemon juice and lemon zest into a smooth mixture: now fold in sieved flour and vanilla extract then together beat in a medium speed with a cake mixer or by hand mixer.

Dust the baking pan with some confectionery sugar and pour the lemon mixtures very thinly.

Top with sliced baby marshmallow before baking for at least 3 minutes or bake until the cake is firm.

When ready  remove from the oven

Let cool and cut into two and  fold over, allowing the marshmallows in between or in the middle.

Cut into squares and serve.

Pack into individual wrap and chill for at least three weeks.

Serve as snacks or during breakfast with coffee/tea or fresh vegetable or fruit juice.


I prepared this for two weeks ago but I had enjoyed having it on every tea break, delightfully nourished every squares in that short period of time. I guess you will love it too when you like lemon taste.

This Lemon Bars or Squares is delicious and I suppose nutritious as well.
