Diced pineapple  with fresh coconut milk

Pineapple with coconut milk

The Pineapple Dish Ingredients:

Fully ripened Pineapple fruit

4 to5 tbsp of Chilli paste

3 tbsp of Pure Olive oil, 1 tbsp of butter or any kind of oil

400 ml fresh coconut milk (reduce if you want less  creamy)

a garlic glove

a slice of lemon

salt to taste

a tsp of sugar

a pinch of cinnamon powder

A tsp of turmeric powder

(5 to 10 fresh shrimps)  optional

Basil leaves to garnish

The Pineapple Fruit

Here’s how you do the Pineapple Dish:

Peel the fresh pineapple fruit, wash and slice into small bite sizes. Saute the garlic and chili paste, stir until fragrant. Add the sliced pineapples, add the sugar and stir until the pineapple is soft or tender.

Add the turmeric; cinnamon powder and fresh coconut juice. Cover and let boil for at least 5 to 8 minutes. Stir to prevent from burning. Squeeze your lemon juice, add salt to taste. Garnish with some fresh or dried basil leaves.

Note: If you find it too creamy add some water. To color this Pineapple dish, a dash of soy sauce will do.

My hubby loves this dish.  He eats it with rice and fried dried salted fish. For me – This Pineapple Dish is a finger licking kind of dish! Enjoy:)
