Crispy Fried Chicken

Recipe includes:-


1 kg chicken (about 2 lbs), cut into 8 portions if purchased whole

1 Cup flour
1/2 Cup instant mashed potato powder
1 Tbs salt (table salt)
1 Tbs mixed dried herbs
½ Tsp ground black pepper
¼ Tsp cayenne pepper
½ Tbs garlic powder
1 Tbs onion powder
2 Eggs
¼ Cup water
Canola oil for frying
Take note:
Another component in getting a good crisp is in the oil. New oil won’t fry as well, and neither will old oil. Adding a little bit of oil previously used to fry into a batch of new oil will help you get good penetration. You can then save the oil for future use, but after multiple fries, you might notice some foam along the top, or that you cannot get it to the right temperature without significant smoking. If that is the case, it’s time to replace it. But remember to keep a spoonful to add to the next oil batch!  – SF Globe fans.

Recipe: Stir Fried Chicken Meat


Recipe: Stir Fried Chicken Meat

We need the following:

! Chicken breast meat
! Garlic gloves
! Bulb onions
! Ginger juice from fresh ginger root
! Fresh lemon grass stick
! Light soy sauce or salt
! Potato flour (optional)
! Green or red pepper to garnish


Choose the chicken meat, wash clean and dry chicken with paper towels or kitchen cloth.

Slice into size bites and set aside

Chop the lemon grass into thin slices and onions, set aside

Cut an inch of fresh ginger root, pound, then squeeze the juice
into the chicken meat to marinate for at least 10 minutes. Sprinkle some salt to taste or light soy sauce.

Deep fry chicken slices until cooked and golden brown. Set aside.

Dice the peppers into bite sizes and blanch, set aside.


Slice the onions and garlic gloves. Put two or three tablespoons of cooking oil into the pan until heated. Put in the garlic and sliced onion until fragrant.

Add the chicken slices and the lemon grass. Stir.

In a bowl of water, 
! add a teaspoon of potato flour
!  and a tablespoon of light soy sauce
! and a tablespoon of chili tomato sauce and a pinch of sugar,
! add a pinch of cinnamon powder into a liquid form. Watery texture is fine.

When the chicken meat is already cooked, add the mixture; stir the peppers or garnish quickly and dish out.

Serve hot or cold with steamed white rice.
