No Bake Peanut Delight

No Bake Peanut Delight Bars

Ingredients

A kilo of fresh peanuts with shells

A cup of sugar

A cup of water

 

Preparations

Boil the peanuts for at least 30 minutes or until cooked

Let cool then remove the shell

Puree or blend the peanuts into a fine paste, set aside

Prepare the syrup 

  • A cup of water and a cup of sugar boil until it is caramelized and before it finally thickens, stir in the peanut paste

Continue to cook, stir until the mixtures thicken

Scoop peanut mixtures into a baking sheet, flatten its surface and cut into desired sizes of your choice

Wrap peanut slices individually (optional), serve or

Chill, Refrigerate and serve

No Bake Chewy Peanut Chocolate Tiffin

Ingredients

  • 275 g ¬†pure organic honey
  • 1 tbsp golden syrup
  • 260 g peanut butter
  • 170 g plain chocolate, chopped
  • 55¬†g Rich Tea biscuit, crushed
  • 130 g roast peanuts, roughly crushed
  • A tsp of apple cider vinegar
  • 10 pieces large plain marshmallows

 Preparations

! In a large saucepan over medium heat, combine the honey, syrup and peanut butter.

! Bring to the boil, remove from heat and stir in chocolate, marshmallows until melted.

!  Mix in biscuits, peanuts and a teaspoon of apple cider vinegar.

! Pat firmly into a greased or lined baking pan.

! Refrigerate overnight

! Cut into bite sizes and serve

No Bake Chocolate Oatmeal Cookies

 

Ingredients

How to prepare:

1. In a sauce pan, heat butter and  milk over  a medium fire until it melts

2. Add sugar and cocoa powder and stir until well blended

3. Turn heat to high and boil for 3 minutes.

4. Remove from boiling and add marshmallows.

5. When the marshmallows are well blended, add vanilla essence

6. Add coconut and oats and mix well

7. Scoop into desired shapes, arrange on a pan

8. Refrigerate until crisp before serving

9. Enjoy!!!

No Bake Lemon Bars

No Bake  Lemon Bars

Ingredients

  • 1 ¬†package (8-ounce)¬†cream cheese, softened at room temperature
  • 1 (14-ounce) ¬†sweetened condensed milk
  • 1/4 cup pasteurized egg product (such as egg beaters)
  • 1 teaspoon finely grated lemon zest
  • 1/2 cup fresh lemon juice
  • 2 teaspoons powdered gelatin
  • 3 tablespoons boiling water
  • Very thinly cut carrot slices¬†or fresh Aloe Vera white meat (chilled and crunchy)

The Preparations

In a large bowl, combine cream cheese, condensed milk and pasteurized egg product and beat on high with an electric mixer until smooth and creamy for 2 minutes
Add lemon zest and juice and beat until fully incorporated for 30 seconds
In a small bowl, combine the gelatin and boiling water and whisk until gelatin is entirely dissolved
Let cool for about 2 to 3 minutes
Stir the gelatin into the cream cheese-lemon mixture until well incorporated
Pour the filling over into a greased or lined pan
Refrigerate for 8 hours or overnight, until the filling is firm
Slice into 2-inch bars using a chilled knife coated with cooking spray.
Serve with a very thinly cut carrot slices as base  (optional)
and top most serve with a loving intention …

‚Ķ it is an inexpensive and delicious snack and the kids love it ! We typically add some flavors to the basic recipe, most often a little cocoa powder and honey or vanilla…

 

“If your kids are like mine, they get hungry often, especially during a growth spurt. Since most snack foods are sugar-laden or chemically laced, snacks can be one of the tougher things to adapt to real food options.

Though slightly unconventional, this Coconut Butter/Cream recipe is a favorite with my kids. It has a texture somewhat like peanut butter, but contains more nutrients. It is filling due to its beneficial fats and protein/fiber content from the coconut. This recipe is also typically a safe option, even if your child attends a school where nuts are not allowed.” –¬†Wellness Mama

Coconut Butter can be eaten in many ways, here are some of our favorites —

A big spoonful by itself for a quick snack

Whipped with a little extra coconut oil, some vanilla and some freeze dried strawberries for a healthy ‚Äúicing‚ÄĚ

1 tablespoon blended into a cup of water for instant coconut milk or chocolate coconut milk

Spread on homemade pancakes

In between homemade pancakes with some banana slices

The ingredients for coconut butter
2 cups shredded coconut meat
3-4 tablespoons of slightly melted extra virgin cold processed by centrifugal extraction coconut oil
2-3 tablespoons of cocoa powder (optional) or 1 teaspoon vanilla (optional)- or both
2 tablespoons of honey or condensed milk (optional- or more/less to taste)
The Preparation instructions ( for 4 servings)
Pulse the shredded coconut in a food processor or high powered blender.
Slowly add the coconut oil and to a thick form and creamy
Add the cocoa powder/honey or vanilla
Blend to incorporate all the ingredients
Store the butter  in a glass mason jar or container
Eat and Enjoy!!!

B. Coconut Bar       (Images not available for now)

An easy, healthy, grain-free energy bar made with chocolate, coconut and honey for an energy-boosting snack.

Ingredients
  • ¬Ĺ cup cocoa butter
  • ¬Ĺ cup coconut oil
  • ¬ľ cup (or more to taste) honey
  • ¬Ĺ cup cooking dark cocoa powder
  • 1-1/5 cups shredded fresh coconut¬†meat
  • vanilla essence¬†(optional)
The Cooking Preparations
  1. Melt the cocoa butter in a small pan over low heat.
  2. Add coconut oil and melt.
  3. Add honey and stir well.
  4. Stir in cocoa powder.
  5. Add and stir shredded coconut meat
  6. Add vanilla essence (optional).
  7. In a baking pan, lined with parchment paper, pour in the mixtures, draw  lines  into squares
    and refrigerate for 1 hour or until it hardens.
  8. Cut into squares when ready to eat
  9. Enjoy … ¬†healthy and home prepared coconut¬†bars!!!
  10.  Refrigerate to keep it fresh and firm!!!
